Didn't make it to Rollag Wed. night. Steve called me in the aft and said most guys were chilling for a road race in west ND and the big Fargo Marathon. So, instead we went with Ramsay, a former employee who was visiting from MI and went to Ice Cracking for some thunder burgers. I think I finally crashed after the Spring Opener weekend so I would of been worthless anyways because I was in a funk. Ramsay did the double. He had it down before we were halfway through ours. Burp. Thurs Jens had a school program but had 2 hours of school first so instead of driving two cars, I brought the Salsa along and did some hill repeats at the mountain. The Salsa not only climbs nicely but descends faster than anything else. I realized that on some of the corners I was overshooting. Only did five climbs but the last one was 4:40 and near the record time. The thunder burger was growling in my stomach so I had it my way on that last one to try and gut it out. I think I have some good speed right now and can climb okay but no endurance. Anyways, Friday I knew if I wanted to get a ride in I better go early so I did two laps. Mowed most of the day with the new Scag. Thing works great. The only thing is I will probably need a hearing aid by the end of the summer. Feels like you are sitting under the prop of a puddle jumper. Wear hearing protection but still. Friday evening we had the grooms dinner for the big wedding this weekend plus 150 birders for dinner. Pan fried walleye for 250.

I think the most I have done for is 225. Count them up, 15 sheet pans 30 or so filets per pan. That makes, what, around 450 filets. We only had about 20 or so leftover. Not a problem using them up Sat night with the buns.
To keep the first batches as fresh as possible, I cook the first 75 or so at high temp and only go halfway and finish them off in the oven at 200. Not quite as good as the fresh fresh but pretty darn close.
Jonell and the crew setting up the dining room. We had 375 for the reception. Had to use the middle conf room on the side for overflow.
Deb, Sara and Carlene opening wine bottles. Jonell got this swift opener that makes it easier. No drama. Once again, Deb and the crew nailed everything on the weekend.
Jonell, Marci, my mom and Jonell's mom doing the flower arrangements. Some serious work to pull off a wedding like we want to. (Jonell stared at 9am and came home at 3am this morning!!) And, of course, we would have the expect the unexpected to happen. The water pipe for the pressure tank in one of the cabins sprung a toothpick size hole leak. Luckily it was noticed and happened in the afternoon so we could take care of it. Friday night after I fried the fish I took Jake to Staples to meet the ins so he could race today and when I got home the wind picked up and the guests were having a campfire and it was just too risky for how dry it is so I spent from 12:30am to 1am putting out the fire with the hose. But, its all good because the people are great. I think I knew more people at this wedding then Jonell and ours. The couple was from DL. I think half of the guys I skated with in hs were here, plus lots of DL people and folks I haven't seen in 15-20 years. Everyone and their sister. That statement would put the former best mechanic in Fargo, Aaron Romaine's, sister, to fit that bill. I think the last time I saw her she was sucking on schrader valves at the Cyclery. Ahh, a bike shop in DL. Those were the days. Lot easier to buy smokes by the carton at discount these days. Sunday I was thinking of going for a long ride but I was toast, 15 miles is all I could manage and shot pucks with Jon instead.

Good ride by Jake yesterday. 36th out of 161 riders. No technical riding either. It was a race of shear motoring power and he beat alot of guys twice his age. Better watch out Jay, couple more years you'll be trying to hang on for dear life behind him.
